Sweet & Sour Pineapple Chicken

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup fresh pineapple, diced

1 bell pepper (red or green), chopped into chunks

1 medium onion, diced

2 cloves garlic, minced

1 inch ginger, grated

1/4 cup soy sauce

1/4 cup apple cider vinegar

1/4 cup brown sugar

2 tablespoons ketchup

1 tablespoon cornstarch

1 tablespoon vegetable oil

Salt and pepper to taste

Cooked rice, for serving

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine soy sauce, apple cider vinegar, brown sugar, ketchup, and ginger. Add the chicken pieces and marinate for at least 30 minutes (or up to 2 hours for best flavor).

    Prep the Sauce: In a small bowl, mix the cornstarch with 2 tablespoons of water until smooth. Set aside.

      Sauté the Veggies: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the diced onion and cook until translucent, about 2-3 minutes. Then, add the minced garlic and ginger, sautéing for another minute until fragrant.

        Cook the Chicken: Increase the heat to high and add the marinated chicken along with the marinade. Cook for about 5-7 minutes or until the chicken is browned and cooked through.

          Add Pineapple and Bell Pepper: Stir in the diced pineapple and bell pepper, cooking for an additional 3-4 minutes until the vegetables are tender yet still colorful.

            Thicken the Sauce: Gradually add the cornstarch mixture to the pan while stirring continuously. The sauce will begin to thicken. Cook for another minute or until it reaches your desired consistency.

              Season: Taste and adjust salt and pepper if needed.

                Serve: Serve the Sweet & Sour Pineapple Chicken over a bed of cooked rice. Garnish with fresh cilantro or sliced green onions if desired.
