Tofu Skewers with Lemon Salsa

For the Tofu Skewers:

14 oz firm tofu, pressed and cut into 1-inch cubes

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon garlic powder

1 teaspoon ground ginger

1 tablespoon maple syrup or agave syrup

1 red bell pepper, cut into chunks

1 small zucchini, sliced into rounds

1 red onion, cut into wedges

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

For the Lemon Salsa:

2 ripe tomatoes, diced

1 small red onion, finely chopped

1 fresh jalapeño, finely chopped (optional for spice)

1 avocado, diced

Juice of 2 lemons

2 tablespoons fresh cilantro, chopped

Salt and pepper to taste

Marinate the Tofu: In a bowl, whisk together soy sauce, sesame oil, rice vinegar, garlic powder, ground ginger, and maple syrup. Add the tofu cubes to the marinade, ensuring they are well-coated. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

    Prepare the Vegetables: While the tofu is marinating, prepare the vegetables. Cut the red bell pepper, zucchini, and red onion into bite-sized pieces.

      Assemble the Skewers: Once the tofu has marinated, thread the tofu cubes and assorted vegetables onto the skewers, alternating between tofu and veggies. Leave a little space between each piece for even cooking.

        Make the Lemon Salsa: In a separate bowl, combine diced tomatoes, red onion, jalapeño, avocado, and cilantro. Squeeze in the lemon juice, and season with salt and pepper to taste. Gently toss the salsa to combine and set it aside.

          Grill the Skewers: Preheat your grill or grill pan to medium-high heat. Lightly oil the grill grates. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally until the tofu is golden brown and the vegetables are tender.

            Serve: Remove the skewers from the grill and serve them hot, topped with the fresh lemon salsa. Enjoy!
