Tofu Skewers with Strawberry Salsa

1 block firm tofu (14 oz), pressed and drained

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon maple syrup

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch

1 tablespoon olive oil (for grilling)

Fresh basil leaves (for garnish)

For the Strawberry Salsa:

1 cup strawberries, hulled and diced

1/4 cup red onion, finely chopped

1 jalapeño, seeded and minced

1 lime, juiced

Salt and pepper, to taste

2 tablespoons fresh cilantro, chopped

Instructions
 

Prepare the tofu marinade: In a bowl, whisk together the soy sauce, sesame oil, maple syrup, rice vinegar, minced garlic, and grated ginger. Cut the pressed tofu into cubes and marinate them in the mixture for at least 30 minutes, stirring occasionally.

    Coat the tofu: After marinating, sprinkle the cornstarch over the tofu cubes. Gently toss to ensure a light coating which will help achieve a crispy exterior when grilled.

      Make the strawberry salsa: In a separate bowl, combine the diced strawberries, red onion, jalapeño, lime juice, salt, pepper, and fresh cilantro. Mix well and adjust seasoning if necessary. Set aside to allow the flavors to meld.

        Preheat the grill: Heat your grill or grill pan to medium-high heat. Lightly brush the grill grates with olive oil to prevent sticking.

          Assemble the skewers: Thread the marinated tofu cubes onto skewers. You can alternate with pieces of bell pepper or zucchini for added flavor and color if desired.

            Grill the skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until golden brown and crispy on all sides.

              Serve: Once cooked, remove the skewers from the grill and let them rest for a minute. Serve the tofu skewers warm with a generous scoop of strawberry salsa on the side. Garnish with fresh basil leaves for an aromatic touch.
