Ingredients

For the Tofu Skewers:

14 oz firm tofu, pressed and cut into 1-inch cubes

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon maple syrup

1 teaspoon garlic powder

1 teaspoon ground ginger

1 tablespoon cornstarch

Salt and pepper to taste

Skewers (soaked in water for 30 minutes if wooden)

For the Watermelon Salsa:

2 cups seedless watermelon, diced

1 small red onion, finely chopped

1 jalapeño, deseeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Instructions

Marinate the Tofu:

    - In a large bowl, whisk together the soy sauce, sesame oil, maple syrup, garlic powder, and ground ginger. Toss in the tofu cubes, ensuring they are well coated. Cover and marinate for at least 30 minutes to 1 hour for better flavor absorption.

      Prepare the Skewers:

        - Preheat your grill to medium-high heat. If using wooden skewers, make sure they’re soaked so they don’t burn.

          - After marinating, sprinkle the tofu cubes with cornstarch, salt, and pepper. This will help create a nice crust when grilled.

            Thread the Tofu:

              - Carefully thread the marinated tofu cubes onto the soaked skewers. You can alternate with bell pepper pieces, cherry tomatoes, or zucchini rounds for added flavor and color.

                Grill the Tofu Skewers:

                  - Place the skewers on the preheated grill. Grill for about 10-15 minutes, turning occasionally until the tofu is golden brown and slightly charred.

                    Make the Watermelon Salsa:

                      - In a medium bowl, combine the diced watermelon, chopped onion, minced jalapeño, cilantro, and lime juice. Toss gently to mix. Season with salt to taste.

                        Serve:

                          - Once the tofu skewers are grilled to perfection, remove them from the grill. Serve hot with a generous spoonful of the watermelon salsa on the side or on top of the skewers for a pop of flavor and freshness.

                            Enjoy!

                              - Relish the combination of the smoky tofu with the sweet and spicy watermelon salsa, making for a perfect summer dish!
