2 boneless, skinless chicken breasts

1 cup fresh pineapple, diced

1 red bell pepper, julienned

1 small red onion, thinly sliced

1 avocado, sliced

1/4 cup fresh cilantro, chopped

1 teaspoon garlic powder

1 teaspoon ground ginger

2 tablespoons soy sauce

1 tablespoon honey

2 tablespoons vegetable oil

Salt and pepper to taste

4 large tortillas (whole wheat or spinach)

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the soy sauce, honey, garlic powder, ground ginger, salt, and pepper. Add the chicken breasts, ensuring they are well-coated. Let them marinate for at least 30 minutes (or up to 2 hours for more flavor) in the refrigerator.

    Cook the Chicken: Heat the vegetable oil in a large skillet over medium heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown. Once cooked, remove from heat and let rest for 5 minutes before slicing into strips.

      Prepare the Vegetables: In the same skillet, add the red onion and bell pepper. Sauté for 3-4 minutes until they are crisp-tender. Remove from heat and let cool slightly.

        Assemble the Wraps: Lay the tortillas flat on a clean surface. Start with a layer of sliced chicken, followed by sautéed vegetables, diced pineapple, avocado slices, and a sprinkle of fresh cilantro.

          Roll the Wraps: Fold in the sides of each tortilla and then roll it tightly from the bottom to the top, securing all the fillings inside.

            Serve: Cut the wraps in half diagonally and serve them with lime wedges on the side for squeezing over the top.
