Ingredients

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 medium red bell pepper, diced

1 medium red onion, diced

1 jalapeño, diced (seeds removed for less heat)

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

Juice of 1 lime

Salt and pepper to taste

1 cup fresh cilantro, roughly chopped

8 small corn or flour tortillas

1 avocado, sliced (for topping)

1 cup crumbled feta or cotija cheese (optional)

Hot sauce (optional, for serving)

Instructions

Sauté the Aromatics: In a large skillet over medium heat, add a tablespoon of olive oil. Once hot, add the diced red onion and jalapeño. Sauté for about 3-4 minutes until the onion becomes translucent.

Add Garlic and Spices: Stir in the minced garlic, ground cumin, and chili powder. Cook for an additional minute until fragrant.

Incorporate Beans and Corn: Add the drained black beans and corn to the skillet. Stir well to combine and cook for about 5-7 minutes, allowing the mixture to heat through.

Season the Mixture: Squeeze the lime juice over the mixture and season with salt and pepper to taste. Remove from heat and fold in the fresh cilantro.

Warm the Tortillas: In a separate non-stick skillet or directly over a gas flame, warm the tortillas for about 30 seconds on each side until they are pliable and slightly toasted.

Assemble the Tacos: Spoon a generous amount of the black bean and corn mixture onto each tortilla. Top with sliced avocado, and sprinkle with crumbled feta or cotija cheese if desired.

Serve and Enjoy: Finish with a dash of hot sauce, if you like it spicy! Serve immediately and enjoy these zesty tacos with your favorite side dish.
