Zesty Black Bean Rice Burrito Bake

1 cup uncooked brown rice

2 cups vegetable broth

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1 cup salsa (mild or spicy, according to preference)

1 1/2 cups shredded cheese (Cheddar or a Mexican blend)

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

Salt and pepper to taste

Tortilla chips (optional, for topping)

Avocado slices and lime wedges for serving

Instructions
 

Cook the Rice: In a medium saucepan, combine the brown rice and vegetable broth. Bring to a boil, then cover and reduce heat to low. Simmer for 45-50 minutes, or until the rice is tender and the broth is absorbed. Fluff with a fork and set aside.

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper, cooking until they're softened, about 5-7 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Combine Ingredients: In a large mixing bowl, combine the cooked rice, black beans, corn, sautéed vegetables, cumin, chili powder, smoked paprika, and salt and pepper to taste. Fold in 1 cup of salsa and half of the shredded cheese. Mix until fully combined.

        Assemble the Bake: Preheat your oven to 350°F (175°C). Spread the rice and bean mixture evenly in a greased 9x13 inch baking dish. Top with the remaining salsa and sprinkle the rest of the shredded cheese over the top.

          Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.

            Serve: Remove from the oven and let it cool for a few minutes. Sprinkle with fresh cilantro, and if desired, crush tortilla chips on top for added crunch. Serve with avocado slices and lime wedges on the side.
