Zesty Chili Stuffed Bell Peppers

4 large bell peppers (any color)

1 lb ground beef or turkey

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (with or without green chilies)

1 packet (1 oz) chili seasoning mix

1 cup corn (frozen or canned)

1 cup shredded cheese (cheddar or Monterey Jack)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cumin

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Sour cream or avocado for serving (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Bell Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and place them upright in a baking dish.

      Cook the Meat: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the ground beef or turkey, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat.

        Mix the Filling: Reduce the heat to low, and stir in the cooked rice, black beans, diced tomatoes (with their juice), corn, chili seasoning mix, garlic powder, onion powder, cumin, and add salt and pepper to taste. Mix well and let simmer for about 5 minutes to combine flavors.

          Stuff the Peppers: Evenly distribute the chili mixture into each of the bell peppers, pressing down slightly to pack it in. Top each filled pepper with shredded cheese.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and the peppers are tender.

              Garnish and Serve: Carefully remove the stuffed peppers from the oven. Allow them to cool for a few minutes. Garnish with fresh cilantro or parsley, and serve with sour cream or avocado on the side if desired.
