Ingredients
  

1 lb boneless, skinless chicken thighs

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

1 cup uncooked long-grain rice

2 cups chicken broth

Zest and juice of 1 lemon

1 cup cherry tomatoes, halved

1 cup fresh spinach

1/2 cup feta cheese, crumbled

Fresh parsley for garnish

Instructions
 

Season the Chicken:

    - In a mixing bowl, combine the olive oil, dried oregano, garlic powder, onion powder, paprika, salt, and pepper.

      - Add the chicken thighs to this mixture and coat well. Marinate for at least 15 minutes for deeper flavor.

        Brown the Chicken:

          - Heat a large skillet over medium-high heat.

            - Add the marinated chicken and cook for about 5-7 minutes on each side until browned and cooked through. Remove chicken from the skillet, cover, and keep warm.

              Sauté the Rice:

                - In the same skillet, add the uncooked rice and toast for about 2 minutes until slightly golden, stirring frequently.

                  - Pour in the chicken broth, lemon zest, and lemon juice. Bring to a boil.

                    Cook the Rice:

                      - Lower the heat, cover the skillet, and let it simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.

                        Add Vegetables:

                          - Stir in the cherry tomatoes and fresh spinach. Cook for an additional 2-3 minutes until the spinach wilts and the tomatoes are warmed.

                              - Nestle the browned chicken thighs back into the skillet with the rice mixture.
