1 cup hummus (store-bought or homemade)

1 large tortilla or flatbread

1 medium cucumber, thinly sliced

1 carrot, julienned

1 red bell pepper, thinly sliced

1 cup baby spinach or mixed greens

2 tablespoons fresh lemon juice

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

1 tablespoon fresh parsley or dill, chopped (for garnish, optional)

Instructions
 

In a medium mixing bowl, combine the hummus, lemon juice, minced garlic, olive oil, salt, and pepper. Mix well to create a zesty garlic hummus. Adjust seasoning according to taste if necessary.

    Lay the tortilla or flatbread on a clean surface. Evenly spread a generous layer of the zesty lemon garlic hummus over the entire surface of the tortilla, leaving about an inch around the edges.

      Begin layering the fresh vegetables. Start with a handful of baby spinach or mixed greens, followed by the sliced cucumber, julienned carrot, and red bell pepper.

        If desired, sprinkle the chopped fresh parsley or dill over the vegetables for an extra burst of flavor.

          Carefully roll the tortilla tightly, starting from one end and tucking in the filling as you go. Once fully rolled, you can secure it with a toothpick or wrap it in parchment paper for on-the-go convenience.

            Slice the wrap in half diagonally for easy eating, and serve immediately. You can also chill in the fridge for about 30 minutes before serving for a refreshing cold wrap.
