2 medium zucchinis, grated (about 2 cups)

2 medium apples, peeled and chopped (e.g., Granny Smith or Honeycrisp)

1/4 cup granulated sugar

1 teaspoon cinnamon

1 tablespoon lemon juice

1 tablespoon cornstarch

For the topping:

1 cup rolled oats

1/2 cup all-purpose flour (or gluten-free flour)

1/3 cup brown sugar, packed

1/2 cup unsalted butter, melted

1 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup chopped nuts (e.g., walnuts or pecans, optional)

Preheat your oven: Begin by preheating your oven to 350°F (175°C).

    Prepare the filling: In a large mixing bowl, combine the grated zucchini and chopped apples. Add the granulated sugar, cinnamon, vanilla extract, lemon juice, and cornstarch. Toss everything together until well coated.

      Transfer to baking dish: Spread the fruit and vegetable mixture evenly into a greased 8x8 inch baking dish or similar-sized oven-safe dish.

        Make the topping: In another bowl, mix together the rolled oats, flour, brown sugar, melted butter, cinnamon, and salt. If using, stir in the chopped nuts for added crunch.
