1 cup grated zucchini (about 1 medium zucchini)

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon ground cinnamon

1 cup chocolate chunks (semi-sweet or dark)

1/2 cup chopped nuts (optional, walnuts or pecans work well)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare Zucchini: Grate the zucchini using a box grater. Squeeze out excess moisture using a clean kitchen towel or paper towel until it's not dripping.

      Make the Dough: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 3-4 minutes.

        Mix in Wet Ingredients: Add the egg and vanilla extract to the butter-sugar mixture, mixing until fully incorporated.

          Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
