For the Zucchini Filling:

4 cups zucchini, peeled and thinly sliced

1 cup granulated sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon salt

2 tablespoons cornstarch

For the Cobbler Topping:

1 cup all-purpose flour

1 cup rolled oats

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/4 cup milk

1 teaspoon vanilla extract

Optional for Serving:

Whipped cream or vanilla ice cream

Prepare the Zucchini Filling: In a large mixing bowl, combine the thinly sliced zucchini, granulated sugar, vanilla extract, lemon juice, cinnamon, salt, and cornstarch. Toss to coat the zucchini well. Allow it to sit for about 10-15 minutes to release some moisture.

    Preheat the Oven: Preheat your oven to 350°F (175°C).

      Prepare the Baking Dish: Grease a 9x13 inch baking dish with cooking spray or butter.

        Make the Topping: In another bowl, mix together the flour, rolled oats, brown sugar, granulated sugar, baking powder, baking soda, and salt. Stir until well combined.

          Combine Wet Ingredients: In a separate small bowl, mix the melted butter, milk, and vanilla extract. Pour the wet mixture into the dry ingredients and stir until just combined. The batter might look a little lumpy; that’s okay!

            Layer the Zucchini: Spread the zucchini mixture evenly over the bottom of the prepared baking dish.

              Add the Topping: Spoon dollops of the cobbler topping over the zucchini filling, trying to cover as much of the surface as possible. It doesn’t have to be perfect.

                Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the zucchini filling is bubbly.

                  Cool and Serve: Once baked, remove the cobbler from the oven and let it cool for about 10 minutes. Serve warm, optionally topped with whipped cream or vanilla ice cream for an extra treat.
