2 medium zucchinis, grated

1 cup feta cheese, crumbled

4 large eggs

1/4 cup milk

1/2 cup fresh spinach, chopped

1/4 cup green onions, finely sliced

1 teaspoon garlic powder

Salt and pepper to taste

4 whole wheat tortillas (or your preferred type)

Olive oil for cooking

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Zucchini: Place the grated zucchini in a clean kitchen towel and wring out excess moisture. This step is essential for avoiding a soggy wrap.

    Whisk the Eggs: In a medium bowl, whisk together the eggs and milk until well combined. Stir in the garlic powder, salt, and pepper.

      Cook the Filling: Heat a large skillet over medium heat and add a drizzle of olive oil. Once hot, add the drained zucchini and sauté for about 2-3 minutes until slightly softened.

        Add Spinach & Onions: Stir in the chopped spinach and sliced green onions and cook for another 2 minutes, until the spinach is wilted.

          Incorporate the Eggs: Pour the egg mixture over the vegetables in the skillet. Gently stir to combine and allow it to cook for about 5-6 minutes until the eggs are just set. Sprinkle the crumbled feta cheese over the top during the last minute of cooking. Remove from heat.

            Assemble the Wraps: Warm the tortillas in a separate dry skillet or microwave until pliable. Spoon a generous portion of the zucchini and egg mixture onto each tortilla.

              Wrap It Up: Fold in the sides of the tortilla and then roll from the bottom up to enclose the filling tightly.

                Serve and Garnish: Slice the wraps in half diagonally, if desired. Serve warm, garnished with fresh parsley, and enjoy your delicious breakfast!
