1 medium zucchini, grated

1 cup cooked jasmine rice, preferably day-old

2 tablespoons vegetable oil

1 small onion, diced

2 cloves garlic, minced

1 medium carrot, finely diced

1/2 cup frozen peas

2 eggs, lightly beaten

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

2 green onions, chopped for garnish

Fresh cilantro, chopped for garnish (optional)

Prep Your Ingredients: Start by grating the zucchini and finely dicing the onion and carrot. Have your rice ready—day-old rice works best for fried rice to keep it from being mushy.

    Sauté the Aromatics: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the diced onions and sauté for about 2 minutes until they turn translucent.

      Add Garlic and Carrots: Stir in the minced garlic and diced carrots. Cook for another 3-4 minutes until the carrots soften slightly.

        Incorporate Zucchini: Add the grated zucchini to the pan, stirring frequently. Cook for about 2-3 minutes until the zucchini has softened and released some moisture but is still vibrant in color.

          Make a Space for Eggs: Push the vegetable mixture to one side of the pan, creating a clear space. Pour the beaten eggs into this space and scramble them until fully cooked, breaking them up with your spatula.
