Ingredients

3 medium zucchinis, grated

1 large carrot, grated

1 small red onion, thinly sliced

1 red bell pepper, julienned

1 cup fresh cilantro, chopped

1/2 cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon honey or agave syrup

1 teaspoon garlic powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for a little heat)

Instructions

Prepare the Vegetables: Using a box grater or a food processor, grate the zucchinis and carrots. Make sure to squeeze out excess moisture from the zucchinis using a clean kitchen towel or cheesecloth to prevent the slaw from being soggy.

Mix the Veggies: In a large mixing bowl, combine the grated zucchini, carrots, sliced red onion, and julienned red bell pepper. Gently toss to evenly distribute the vegetables.

Make the Dressing: In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, honey or agave syrup, garlic powder, salt, black pepper, and cayenne pepper (if using) until smooth and well-blended.

Combine Dressing and Veggies: Pour the dressing over the vegetable mixture and stir until all the veggies are well-coated.

Add Cilantro: Fold in the chopped cilantro to add freshness and a burst of flavor to the slaw.

Chill: Cover the slaw and refrigerate for at least 30 minutes to allow the flavors to meld together. If you have more time, letting it sit for a few hours is ideal.

Serve: Toss the slaw again before serving. Enjoy it as a crunchy side dish or as a topping for tacos and sandwiches!
