Zucchini & Turkey Breakfast Burrito

1 medium zucchini, grated

1 lb ground turkey (lean)

1 small onion, finely chopped

2 cloves garlic, minced

4 large eggs

1/2 cup shredded cheddar cheese

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper to taste

4 large whole wheat tortillas

1 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Salsa or hot sauce (for serving)

Instructions
 

Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion becomes translucent, about 3-4 minutes.

    Cook the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked through, about 5-7 minutes. Season with cumin, smoked paprika, salt, and pepper.

      Add Zucchini: Stir in the grated zucchini and cook for an additional 3-4 minutes, or until the zucchini is tender and has released some moisture.

        Scramble the Eggs: In a bowl, whisk together the eggs until well blended. Pour the eggs into the skillet with the turkey and zucchini mixture. Stir gently until the eggs are just set, about 2-3 minutes. Remove from heat and mix in the shredded cheddar cheese.

          Assemble the Burritos: Lay a tortilla flat on a clean surface. Spoon a generous amount of the turkey and zucchini filling onto the center of the tortilla. Fold in the sides and then roll it up from the bottom to the top, ensuring the filling is tucked in.

            Toast the Burritos: (Optional) In the same skillet, add each burrito seam-side down and cook on medium heat for about 2-3 minutes on each side, or until golden brown and slightly crispy.

              Serve: Slice the burritos in half, sprinkle with fresh cilantro, and serve with salsa or your favorite hot sauce.
